something that I've been trying to learn a lot better during this quarantine time, which

is cooking. So I've been doing a lot of different dishes on different days. I've been making

soups and cooking meats and just really doing my best to try to learn a bit about cooking

in this time period to try to do something productive while I'm stuck at home. And I've

been trying to find healthy foods that also are tasty. So I don't want it to just be, you know,

spinach kale all these green things but I'm also not trying to just make french fries every night

you know so trying to find something in between that's balanced um but also is a type of comfort

food you know so today I'm going to talk with you about my favorite dish that I've discovered

and perfected and I'm going to teach you how to make it so that you can try it at home if you

want maybe you can make it for your parents for your family for your siblings who's to say um but

yeah, I'm going to walk you through that today. So first things first, let's talk about the

ingredients that you're going to need to make this. So you'll need olive oil, a little bit of

garlic. You will need some chicken broth, quinoa. You can use any type of quinoa. It can be the

mixed variety. It can be white quinoa. It can be brown quinoa. It doesn't matter. You're going to

need black beans I got these in a can they're already cooked so that I don't have to cook them

myself just because it's nice to be able to be a little lazy sometimes so you can grab those I got

those at the Corte Ingles um you want some corn and some tomatoes and then if you want you could

get some chips I like to crumble those on top after once I'm done making it and an avocado as

well. Hello, I'm back. So I've done some of the boring work for you. What I've done is I've taken

about four cloves of garlic and I have them just with olive oil in here and I'm heating them up

until I can start to smell the garlic, until it starts to smell really garlicky, really delicious

if you're like me and you love garlic. And I'm gonna add a bit of salt in here. You can add some

other seasoning if you'd like so we'll do that all right so like I said it's starting to smell

really good in here and the next thing you do is you basically add the rest of the ingredients

so what you're gonna do is you're gonna grab your quinoa I've rinsed this so basically I just put it

in cold water and then strange the cold water out but you don't need to do that yourself if you don't

want to. Some people think that it makes the quinoa taste a little bit better. I think it does

but not everyone agrees with me. So you put that in. You take your tomatoes. Pour those in. You're

going to take your corn. Do the same thing right in there. Mix it all up. It's going to hiss a bit

like this. You put it all in the same pot which is nice. That makes it easier. And then I'm also

going to get my beans, which I have rinsed just from the can. They're cooked already and you're

going to pour those in as well. All right, so I've been waiting while I was waiting for my soup to

boil. So you can see right now it's really boiling. Look at all those bubbles. It's moving very

quickly. So what I'm going to do is I'm going to turn the heat down a bit. So I want it to be a

little bit less and I want to bring it down to what we call a simmer so it's kind of like a boil

there are still bubbles but it's not as intense and I'm gonna let it stay like this right here

for 20 minutes so I'm gonna put it oh gosh it's getting foggy I'm going to put a timer on for 20

squeeze a bit of lemon on it just to give it some acid you can use whatever type of you can use a

real lemon if you want but I'm just lazy and then I like to oh can I do this one-handed crush up

chips to put in it so it's kind of like nachos uh it's really really delicious and that is how

you make the dish. You can have leftovers. You can add avocado if you want. You can put whatever

you think would be good as a topping, but it's really delicious. It's not too healthy, but it's
