Otherwise you can simply discard the entire harvest and it takes 20 weeks to grow shiitake mushrooms, for example. 00:01:35
So you only realize that they've been contaminated 20 weeks later and your losses are enormous. 00:01:41
Many farmers underestimate the difficulty of producing substrates for different kinds of mushroom. 00:01:49
If they're exposed to contamination for several months, 00:01:54
there's no way to recover and the company goes bankrupt. 00:01:57
In addition, the traditional manufacture of the product is something like an enormous kitchen recipe. 00:02:01
This is particularly difficult for small business because it requires a huge amount of handling time and energy. 00:02:06
Throughout the entire process, a means must be found to ensure better sterility of the product and to save time and energy. 00:02:12

For some time now, we've been thinking about working with European partners. 00:02:29
In fact, we have already done joint projects with the EU in the past 00:02:33
and the results of the previous research were completely satisfying. 00:02:38
So we thought we could try again for this bulk substrate manufacturing project. 00:02:43
The bulk substrate project groups small businesses from Belgium, Germany, Spain, Ireland, Malta, Norway, Italy and Israel. 00:02:50
The research that began in January 2004 also included two research centers, 00:02:59
the Catholic Higher Educational Institute in Ghent, Belgium, and the WAM Institute in Rome, Italy. 00:03:04
One of the objectives targeted by the partners was to replace this crucial stage of production. 00:03:10
The European Union has already started the process of manufacturing the bulk substrate. 00:03:15
The bulk substrate is a cooperative research project that costs 1,945,000 euro 00:03:20
and the European Union contributed 1,008,000 euro. 00:03:26

As you can see, the people here wear sterile clothing to avoid contaminating the product. 00:03:48

This is the result of the collaboration between eight SMEs and two research centers. 00:04:17

Traditionally, we needed 36 hours for production. 00:05:31
And with the new system, we think we can cut it down to only five hours. 00:05:36
The Norwegian company, Mio, grows mushrooms, amongst other things, 00:05:45
and is particularly pleased with the performance of the prototype. 00:05:50
The project has enabled us to save energy, 00:05:55
but what really interests us is the sterilization provided by the machine. 00:06:00
Our company also makes cheese, 00:06:05
and soon we want to come out with a new range of products, cheese with mushrooms. 00:06:10
After all, certain mushrooms have the property of reducing the quantity of fat absorbed by the organism 00:06:15

Fungus and plant extracts can play an important role in animal feed, 00:06:31
because they can be used as alternatives for antibiotics. 00:06:36
And as you know, antibiotics in animal feed will be prohibited on the 1st of January 2006. 00:06:41
The advantage for the producer is that you can reliably invest in a food additive 00:06:51
that does not fall under the future prohibition of antibiotics. 00:06:56
The market is huge. 00:07:03
Europe, with 25 member states, spends at least 600 million euros a year on antibiotics for animal feed. 00:07:08
Each partner had its own requirements, 00:07:13
but we have a single prototype. 00:07:18
This is why we've developed a very elaborate machine, 00:07:23
and that's the real advantage of this type of project. 00:07:28
